Grandma’s Kitchen Secrets: How Long Should You Soak Dried Beans? A Complete Guide

Grandma showing five dried bean varieties to a group around a kitchen table: butter beans, black turtle beans, rajma, chickpeas and lobia

Have you ever soaked rajma overnight, only to find the beans still hard after cooking? Grandma knows the feeling. The right soak gives dried beans a head start, but the real test is whether they're fully cooked and tender.

Why soak dried beans?

Soaking helps dried beans absorb water, which can shorten cooking time and help them cook more evenly. Use a large bowl and plenty of water: beans expand as they soak. Drain and rinse before cooking in fresh water.

Grandma’s bean soaking guide

Bean Soak Approximate stovetop cooking time after soaking
Butter beans 8–12 hours 45–90 minutes
Black turtle beans 8–12 hours 60–90 minutes
Rajma / red kidney beans 8–12 hours 60–90 minutes or longer
Chickpeas / kabuli chana 8–12 hours 60–90 minutes or longer
Black-eyed beans / lobia 4–8 hours 30–60 minutes

These are starting points, not guarantees. Bean age, variety, water and cooking method all affect the timing. Cook until completely tender.

Butter beans

Soak for 8–12 hours, then drain, rinse and cook in fresh water until tender. Their creamy texture works beautifully in tomato masalas, soups and stews. Try cooked butter beans with onion, ginger, garlic, cumin and coriander.

Black turtle beans

Soak for 8–12 hours. After draining and rinsing, cook in fresh water until tender. Their earthy flavour works in spiced curries, rice bowls and chaats.

Rajma / red kidney beans: the important safety step

Soak for 8–12 hours, discard the soaking water and rinse thoroughly. Raw or undercooked kidney beans are unsafe to eat. Boil vigorously in fresh water for at least 10 minutes, then continue cooking until completely tender. Do not rely on a slow cooker alone for dried kidney beans unless they have first been properly boiled.

Grandma’s kitchen secret: Once the rajma is fully cooked, mash a spoonful into the gravy to give it a richer texture. Serve with basmati rice.

Chickpeas / kabuli chana

Soak for 8–12 hours in plenty of water. Drain, rinse and cook in fresh water until tender. Use the cooked chickpeas for chole, chaat, hummus or salads. A little cooking liquid can help bring a chole masala together.

Black-eyed beans / lobia

Soak for 4–8 hours, then drain, rinse and cook until tender. Lobia makes a comforting curry with onion, tomato, ginger, garlic and cumin, or a simple salad.

Forgot to soak them? Try a quick soak

Cover dried beans generously with water in a large saucepan. Bring to a boil for about 2 minutes, turn off the heat, cover and leave for about 1 hour. Drain and rinse, then cook in fresh water. For red kidney beans, the separate vigorous-boil safety step still applies.

When should you add salt or tomato?

Salt does not automatically stop beans becoming tender. Acidic ingredients such as tomato, tamarind, vinegar and lemon can slow softening, so add plenty of acid after the beans have softened.

Why are my beans still hard?

Older beans may take longer. Hard water and acidic ingredients added early can also slow cooking. Keep cooking and check for tenderness rather than relying on the clock. A pressure cooker can save time, but follow your appliance instructions and make sure the beans are completely cooked before serving.

Grandma’s five bean rules

  1. Soak in plenty of water.
  2. Drain the soaking water.
  3. Rinse the beans.
  4. Cook in fresh water until tender.
  5. Check the bean, not just the timer.

Extra rule for kidney beans: Never eat them raw or undercooked; give them a vigorous boil for at least 10 minutes before continuing to cook until tender.
