How to Cook Vatana

Soak overnight in plenty of cold water, then drain and rinse. Pressure cook for 15–20 minutes or simmer on the hob for 60–75 minutes until soft and tender. Season with cumin, turmeric, and tamarind for an authentic ragda base, or blend into a hearty pea curry.
