🛒 Ingredients (Serves 2)
- 2 cups water
- 1 cup full-fat milk
- 2 teaspoons Brooke Bond Red Label Tea (or any strong black tea)
- 2 teaspoons sugar (or to taste)
- ½ inch fresh ginger, lightly crushed
- 2 green cardamom pods, crushed
- 1 small cinnamon stick
- 2 cloves
Optional: swap sugar for jaggery for a more traditional, earthy sweetness.
Method
Step 1 – Infuse the Spices
Bring the water to a gentle boil. Add the crushed ginger, cardamom, cinnamon and cloves.
Allow the spices to simmer gently for 3–4 minutes. This releases their natural oils and creates the rich aroma that makes Masala Chai so special.
Step 2 – Add the Tea
Add the Brooke Bond Red Label tea leaves and continue simmering for another 2 minutes. The tea will develop a deep amber colour while absorbing the flavours of the spices.
Step 3 – Pour in the Milk
Add the milk and gently bring everything to a boil. Reduce the heat and allow the chai to simmer for another 3–4 minutes. The longer it simmers, the richer and creamier the flavour becomes.
Step 4 – Sweeten & Serve
Add sugar (or jaggery) to taste. Strain into your favourite cup and enjoy piping hot.
