There are recipes you learn from cookbooks.
And then there are recipes you learn by standing in the kitchen, watching your grandmother cook — where the measurements are "thoda sa", the timing is "jab khushboo aane lage", and somehow it tastes perfect every single time. ❤️
Today, we're making one of those dishes: Dahi Bhindi.
Creamy, tangy yoghurt gravy, beautifully cooked bhindi and simple Indian spices. Nothing complicated — but there are a few secrets.
🛒 What You'll Need
For around 3–4 servings, you'll need 500g fresh bhindi, 250g plain yoghurt, one onion, ginger, a green chilli, cumin seeds, turmeric, coriander powder, red chilli powder, garam masala, kasuri methi, salt, ghee or oil and a little fresh coriander.
Got everything? Good.
Now Grandma would probably tell you that you've already made your first mistake if you've just washed the bhindi and started chopping it. 😄
👵 Grandma's Four Kitchen Secrets
Grandma's Secret #1: Never chop wet bhindi
Wash your bhindi before you start cooking and dry it thoroughly with a clean kitchen towel.
Only then should you cut it.
Because water and freshly cut bhindi are not good friends. Moisture encourages that sticky texture everyone complains about.
Dry bhindi = beautifully cooked bhindi.
And don't slice it paper-thin. Give it some body so it still tastes like bhindi when it reaches the plate.
Grandma's Secret #2: Don't keep stirring!
Heat a little ghee or oil in your pan and add the chopped bhindi.
We're all guilty of it — something goes into the pan and immediately we want to move it around.
Leave the bhindi alone for a little while.
Let it touch the hot pan. Let it colour. Turn it occasionally until it's lightly browned and cooked but still holding its shape.
Then take it out and keep it aside. "Abhi gravy mein mat daalna!" 😄 We'll bring it back later.
Grandma's Secret #3: Never frighten your Dahi
In the same pan, add cumin seeds. Once they crackle, add your chopped onion, ginger and green chilli. Cook gently until the onion is beautifully golden.
Meanwhile, whisk your yoghurt until completely smooth.
Now reduce the heat — and this next bit matters.
Cold yoghurt thrown into a screaming-hot pan can split. Lower the flame first, then add the whisked yoghurt gradually, stirring continuously. Be patient.
Once it settles into the masala, add turmeric, coriander powder, chilli powder and salt. Let everything cook gently until you have a smooth, creamy, slightly tangy gravy.
Too thick? Grandma wouldn't reach for a measuring jug. Just a little splash of water. 😉
Grandma's Secret #4: Wake up your Kasuri Methi
Add your cooked bhindi back to the yoghurt gravy. Fold it through gently and let everything simmer together for about 4–5 minutes.
Now switch the heat down and reach for the kasuri methi. But don't just throw it in.
Take the dried leaves between your palms. Rub them together. Then smell your hands.
That's the aroma you're trying to put into the curry.
Crush a small amount over the Dahi Bhindi, add a little garam masala and finish with fresh coriander.
Taste. Need salt? Add it. Want more heat? A little chilli. Too tangy? A tiny touch of sweetness can balance it.
Because Grandma's final rule would probably be:
"Recipe ko mat follow karo… taste ko follow karo."
Don't blindly follow the recipe. Follow the taste. ❤️
The Taste Test
That's your Dahi Bhindi. Creamy. Tangy. Gently spiced. With bhindi that still has texture rather than disappearing into the gravy.
Now put a couple of hot parathas on the tawa, tear one while it's still steaming and scoop up that first bite.
That's the real taste test. 😋
