Ingredients (Serves 4)
Main Ingredients
- 2 cans of spinach (puree or leaf)
- 250g fresh paneer, cut into cubes
- 1 medium onion, finely chopped
- 2 medium tomatoes, chopped
- 4 cloves garlic, finely chopped
- 1-inch piece fresh ginger, grated
- 2 tbsp vegetable oil or ghee
Spices
Optional
- 2 tbsp fresh cream
- 1 chopped green chilli for extra heat
Method
Step 1 – Prepare the Base
Heat the oil or ghee in a deep pan. Add the cumin seeds and allow them to crackle before adding the chopped onions.
Cook until the onions become soft and lightly golden, then add the garlic and ginger. Sauté for another minute until fragrant.
Step 2 – Make the Masala
Add the chopped tomatoes and cook until they soften and begin to break down. Stir in the turmeric, coriander powder and salt.
Cook for another 3–4 minutes until the oil begins to separate from the masala — that's when you know it's ready.
Step 3 – Add the Spinach
Pour in the canned spinach and mix well. Simmer gently for around 5 minutes.
For a smoother, restaurant-style finish, blend the spinach mixture using a hand blender before returning it to the pan.
Step 4 – Add the Paneer
Add the paneer cubes and gently simmer for another 5 minutes. Sprinkle over the garam masala and stir carefully.
If you like a richer curry, finish with two tablespoons of fresh cream.
Serving Suggestions
Palak Paneer is delicious served with:
