Gujarati Chhundo & Cheese Toastie: A Sweet, Spicy Indian Twist on Grilled Cheese

Gujarati Chhundo and Cheese Toastie with melted cheese and Rishta shredded mango chutney, featuring Curry Kart mascot, easy 10-minute recipe and www.currykart.co.uk

A traditional Gujarati mango preserve meets a classic British cheese toastie, with deliciously sweet, tangy and savoury results.

Golden bread, melted cheddar and a spoonful of chhundo: sometimes the smallest addition makes the biggest difference. This Gujarati chhundo and cheese toastie recipe brings the sweet-spiced flavour of shredded mango together with the comforting richness of grilled cheese.

Allow around 10–15 minutes for two toasties, depending on your pan and whether you cook them together or in batches. It is a simple lunch, a quick supper or a new way to enjoy a familiar Gujarati favourite.

What Is Chhundo?

Chhundo, also spelled chundo or chhunda, is a Gujarati sweet mango preserve or pickle, traditionally made with shredded raw mango, sugar and spices. Unlike a smooth mango chutney, it has a distinctive shredded texture and a sweet-tangy flavour.

It is traditionally served with thepla, roti, paratha and Gujarati meals. Our kitchen twist is to pair it with cheese: the mango sweetness contrasts with savoury cheddar, while the spices bring another layer of flavour.

For this recipe, use Rishta Chhundo (Shredded Mango), available from Curry Kart in a 400g option.

Chhundo and Cheese Toastie Recipe

Preparation: 5 minutes
Cooking: 5–7 minutes per batch
Makes: 2 toasties

Ingredients

  • 4 slices of bread
  • 80–100g mature cheddar, grated
  • 2–3 teaspoons Rishta shredded mango chhundo
  • 1 tablespoon softened butter
  • 1 small green chilli, finely chopped, optional
  • A little finely chopped fresh coriander, optional
  • A pinch of black pepper

Method

  1. Butter the bread. Lightly butter one side of each slice. Place two slices buttered-side down on a board.
  2. Add the filling. Divide the cheddar between these two slices. Spoon 1–1Β½ teaspoons of chhundo over each, spreading gently and leaving a small border around the edges.
  3. Season to taste. Add the optional green chilli and coriander, then a little black pepper.
  4. Close the sandwiches. Top with the remaining bread, keeping the buttered sides facing out.
  5. Toast gently. Heat a frying pan over medium-low heat. Cook for around 2–3 minutes on each side, pressing lightly with a spatula, until the bread is golden and the cheese has melted. Reduce the heat if the bread browns before the cheese melts. Cook in batches if necessary.
  6. Serve. Let the toasties stand briefly, then slice and enjoy while warm. The filling will be hot.

Allergen note: Standard bread and dairy cheese or butter commonly contain wheat and milk. Check the labels on every ingredient, including the chhundo, for allergens and suitability for your dietary needs.

Grandma’s Kitchen Secret: A Little Chhundo Goes a Long Way

Grandma’s advice for this one? Start with a small spoonful. A teaspoon per sandwich gives a gentle sweet-tangy contrast; add a little more next time if you prefer a stronger mango flavour. Too much filling can spill out and make the bread soggy.

Keep the heat moderate, too. A toastie needs enough time for the cheese to soften before the outside becomes too dark.

Three Easy Toastie Variations

Chhundo, Cheese and Chilli

Add finely chopped green chilli or a small pinch of chilli flakes for extra heat. Adjust to your taste rather than adding both straight away.

Chhundo and Paneer

Replace some of the cheddar with crumbled paneer and add fresh coriander. Retain some cheddar for a melting finish, as paneer holds its shape rather than melting like cheddar.

Chhundo and Masala Potato

Add a thin layer of freshly cooked mashed potato seasoned with cumin, coriander and green chilli. Keep the layer modest so the sandwich heats evenly and closes easily.

More Ways to Enjoy Gujarati Chhundo

  • Serve with warm thepla for a traditional pairing.
  • Spoon alongside paratha, roti or a Gujarati meal.
  • Use a little in a cold cheese and chutney sandwich.
  • Offer as a sweet-tangy condiment with savoury snacks.
  • Pair with mature cheese on a cheeseboard.

After opening, follow the storage instructions on your jar and use a clean spoon each time.
