There are some dishes that don't need an introduction.
You smell the cumin sizzling in the kitchen, hear the pressure cooker or pan bubbling away, and before anyone calls you for dinner, you already know what's cooking.
Aloo Matar.
Potatoes, peas, tomatoes and a handful of everyday Indian spices — nothing fancy, nothing complicated. Just proper ghar ka khana.
And if Grandma was making it? She probably wasn't measuring anything.
A little turmeric from this dabba. A spoonful of coriander powder from another. A few potatoes. Some peas. And when you asked how much masala she'd added...
"Bas andaaze se."
Just by judgement.
Unfortunately, Grandma's andaaza isn't very helpful when you're standing in your own kitchen wondering whether you've added half a teaspoon or half the masala box. 😄
So we've measured it for you. Here is Grandma's Easy Aloo Matar Recipe — a simple Indian potato and peas curry that's perfect for a quick family dinner.
What Is Aloo Matar?
Aloo Matar — also written as Aloo Mutter — is a classic North Indian curry made with potatoes (aloo) and green peas (matar) cooked in a lightly spiced onion and tomato gravy.
It's one of those wonderfully forgiving Indian recipes. Make it with more gravy and serve with rice. Keep it slightly thicker and scoop it up with hot rotis or parathas. Add a little more chilli if you like things spicy, or keep it mild for a brilliant family meal.
And because most of the ingredients are everyday cupboard and freezer staples, it's also an excellent answer to: "What am I going to cook tonight?"
Grandma knew that problem long before Google did.

Prep time: 10 minutes Cooking time: 20–25 minutes Serves: 3–4 Difficulty: Easy
Best served with: Roti, chapati, paratha or basmati rice
🛒 Ingredients
- 3 medium potatoes, peeled and cut into bite-sized cubes
- 1 cup green peas — fresh or frozen
- 1 medium onion, finely chopped
- 2 medium tomatoes, finely chopped
- 1 green chilli, finely chopped
- 1 tsp cumin seeds
- 1 tbsp ginger-garlic paste
- ½ tsp turmeric powder
- 1 tsp coriander powder
- ½–1 tsp red chilli powder, depending on how spicy you like it
- 1 tsp garam masala
- 2 tbsp cooking oil
- Salt, to taste
- Fresh coriander, chopped
- 1½–2 cups water
Optional extras
A small pinch of kasuri methi (dried fenugreek leaves) added towards the end lifts the whole dish. But don't turn a simple Aloo Matar into a spice cupboard examination. Grandma wouldn't approve. 😄
🍳 How to Make Easy Aloo Matar
Step 1 – Get Everything Ready
Peel the potatoes and cut them into roughly equal-sized cubes. Finely chop the onion, tomatoes and green chilli. If you're using frozen peas, there's usually no need to defrost them first.
And get your spices out before you start cooking. Because hunting for the garam masala while your onions are burning is not part of the recipe. 😄
Step 2 – Start With the Cumin
Heat 2 tablespoons of oil in a wide pan or kadai over medium heat. Add 1 teaspoon cumin seeds and let them sizzle for a few seconds until fragrant.
That smell? That's when an ordinary pan of oil starts becoming Indian food.
Step 3 – Add the Onion
Add the finely chopped onion. Cook over medium heat, stirring occasionally, until soft and lightly golden. Don't rush this part — the onion forms the base of your curry.
Step 4 – Ginger, Garlic & Chilli
Add 1 tbsp ginger-garlic paste and the chopped green chilli. Stir and cook for around 1 minute until the raw smell disappears.
Cooking for children? Reduce the green chilli or leave it out entirely.
Step 5 – Make Grandma's Masala
Add the chopped tomatoes, then add ½ tsp turmeric, 1 tsp coriander powder, ½–1 tsp red chilli powder and salt to taste.
Cook over medium heat until the tomatoes become soft and break down into the onions — you want a lovely thick masala, not pieces of raw tomato floating around the curry. If it starts sticking, add a small splash of water.
👵 Grandma says:
"Masala ko thoda pakne do." — Let the masala cook properly. Some things shouldn't be rushed.
Step 6 – Add the Potatoes
Add your cubed potatoes to the cooked masala. Mix well for 1–2 minutes, making sure the potatoes get nicely coated with the spices before you add any water.
Step 7 – Add the Peas
Add 1 cup of green peas and mix everything together. Frozen peas work beautifully here — potatoes in the cupboard + peas in the freezer = dinner halfway sorted.
Step 8 – Add Water & Cook
Add approximately 1½ cups water. Mix well and bring to a gentle boil, then cover the pan and reduce to low-medium heat. Cook for approximately 15–20 minutes, stirring occasionally, until the potatoes are completely tender.
Test a potato with the edge of your spoon — it should break easily without turning the entire curry into mashed potato. If it dries out before the potatoes are done, add a little more hot water.
Step 9 – Grandma's Little Gravy Trick
Once the potatoes are cooked, take the back of your spoon and gently mash just one or two pieces of potato into the gravy. Not all of them! You're not making mashed potatoes. 😄
Those couple of mashed pieces naturally thicken the tomato gravy and give your Aloo Matar that comforting homemade texture.
👵 Grandma says:
"Gravy patli nahi honi chahiye." — The gravy shouldn't be too watery.
Step 10 – Finish With Garam Masala
Add 1 teaspoon garam masala. If you're using kasuri methi, crush a small pinch between your palms and add it now.
Mix gently and cook uncovered for another 1–2 minutes. Turn off the heat. Add a generous handful of freshly chopped coriander.
🍽️ Time to Eat
Spoon your hot Aloo Matar into a serving bowl and finish with a little extra fresh coriander. Serve with:
- Soft chapatis or rotis for a simple everyday dinner
- Parathas when you want something a little more indulgent
- Steamed basmati rice when you want that beautiful gravy soaking into every grain
And a little achar on the side never hurt anyone.
👵 Grandma's Aloo Matar Tips
- Don't cut the potatoes too large. Smaller, evenly sized cubes cook faster and absorb more flavour.
- Cook the tomato masala properly. This is where much of the flavour develops.
- Don't add too much water at the beginning. You can always add more later.
- Add garam masala towards the end. It keeps its lovely aroma rather than disappearing during a long cook.
- Mash one or two potatoes into the gravy. An easy way to make the curry naturally thicker.
- Taste before serving. Recipes tell you how much salt and chilli to start with. Your tongue tells you when dinner is ready.
🌶️ Make It Your Way
- For children: Leave out the green chilli and reduce the red chilli powder.
- For a drier Aloo Matar: Use less water and cook uncovered towards the end.
- For more gravy: Add a little extra hot water and simmer for a few minutes.
- For extra vegetables: Add carrots or cauliflower.
- For extra richness: Finish with a small spoonful of ghee. ❤️
- For more heat: Add another green chilli.

Why Aloo Matar Is Such a Good Midweek Dinner
You don't need unusual ingredients. You don't need restaurant techniques. You don't need two hours. And you certainly don't need seventeen different masalas.
It's essentially potatoes, peas, onion, tomatoes and everyday Indian spices — transformed into something warm, filling and deeply comforting. Naturally vegetarian and easily made vegan with vegetable oil.
Make a bigger batch and you've got lunch sorted for the following day too.

Allow leftover Aloo Matar to cool, transfer to a clean covered container and refrigerate promptly.
And those half-used packets of cumin, turmeric, coriander powder and garam masala? Close them properly and keep them somewhere cool and dry.
Because Grandma didn't spend all that time teaching us how to cook just so we could leave the masala packet open in the cupboard.
